Bringing Date-Night Home with Spinach Ravioli & Lobster

Why do we believe that we can only enjoy some meals in a fancy restaurant simply because we believe the chefs do it best or that the meal is too daunting to prepare at home? Life is too short to hold on to these beliefs. Chefs do not have secret powers we cant access at home
Take this Spinach Ravioli & Lobster, for example. Instead of reserving it for “special occasions” or date-night at a five-star restaurant, imagine learning to make it yourself. It is creamy, indulgent, and just as delicious (if not better).

You get to enjoy it in cozy flip-flops, a breathable house dress, fresh-faced and relaxed, not squeezed into a 3-inch gold heel and a tight red dress, trying to make small talk with a stranger from Tinder (oops ). Plus, you actually know your spinach was washed properly and your lobster seasoned with real, natural ingredients. That peace of mind? Priceless.
I've always loved pasta. It’s cozy, easy, and honestly one of my go to comfort foods. But the more I started reading about how flour-heavy meals can impact blood sugar especially when you’re dealing with PCOS and insulin resistance the more I knew I had to rethink how I was eating it.
I thought to myself, "I love pasta and I want to keep eating it so how can I balance it in a way that still feels good to my body without compromising flavor?" So I began experimenting, I played around with ways to incorporate more fiber, adding fiber-rich veggies, trying high fiber pasta alternatives, and making sure to balance the plate with protein and healthy fats. It became a fun little kitchen adventure.
And the best part?
After enjoying this meal, I checked my blood sugar two hours later… and no significant spike. Honestly, I was so relieved. It wasn’t just a win for my taste buds, it felt like a small but powerful win for my PCOS journey. 
Turns out, luxury is not only found in a restaurant. Sometimes, it’s in your kitchen, in comfort clothes, taking control of your wellness and still enjoying food you love.

Recipe List
- Spinach
 - 1 ¼ cups Flour
 - 1 Egg
 - Lobster
 - Salt
 - Seasoning
 - ½ cup Ricotta Cheese
 - ½ cup Heavy Cream
 - 3TBS Sundried Tomato paste
 - 1tps of black pepper
 - Garlic
 - Fresh Cilantro
 
How to Prep
- Blend fresh spinach until smooth.
 - On a clean surface, make a well in the flour; add egg, salt, and the blended spinach.
 - Mix and knead until a smooth dough forms.
 - Cover and rest for 15–20 minutes.
 - Season the lobster and grill until cooked; set aside.
 - In a bowl, combine ricotta cheese, black pepper and finely chopped blanched spinach. Roll out the pasta dough thinly.
 - Place small scoops of the ricotta-spinach filling on one sheet ( I find using a piping bag easier for portioning) ; cover with another sheet and press edges to seal.
 - Cut into desired shapes and set aside.
 
For the sauce
- Add olive oil, garlic, cream and sun dried tomatoes sauce
 - Add salt, seasoning , finely chopped cilantro and leave to simmer on low heat,
 
Mixing both
- Boil already prepped ravioli for 3 to 5 minutes, until they float
 - Introduce the ravioli to the sauce and 1-2 tbs of pasta water stir gently
 - Allow to simmer for 1-2 minutes
 - Take down and serve with already grilled lobster
 
Bonus Tips:
- If you’re adding spinach to your filling, make sure it’s thoroughly squeezed dry. Any leftover water will leak out during cooking and trust me, that’s a disaster you don’t want!
 - A quick test of your ravioli dough’s consistency: during the first boil, the ravioli should float to the top. If it sinks, the dough texture is off. Do a sample test batch before cooking them all.
 - Don’t overboil the ravioli, once it’s floating and tender, remove it right away. Overcooking will cause the seams to split and the pasta to lose its shape.
